Self made millionaire Elizabeth Holmes is going to be in a movie I'll try to watch. The miniseries is called The Dropout, since this fraud had only graduated high school, then dropped out of Stanford, claiming to start a company Theranos that do blood testing better than anyone else. The interesting part, is that she was able to fool the world, Forbes, for a while. Pyramid scheme is one thing and very common, but this is a whole other level.

Tim Keller on Stephen Colbert's response to Dua Lipa, so did Alex:

I'll give my take first on Colbert, and then a brief analysis on Keller and Alex, who only both proved my criticism of them before.

The question is basically asking: Do you think your work (comedy) contradicts (overlaps) with your faith (Christianity/Catholicism)? If they do, which one wins out?

Had Colbert exercised his answer to his ability in humility, he should have stopped at "faith wins out in the end". Which basically gave the answer: Yes, and yes. His quirky joke like "I hope Jesus has a sense of humor" should do just fine as a finale to the question. But he had to go out of his humility to add further explanation to justify himself by saying "But I would say this..." Thus voiding his initial answer, for listeners who are unbias and clear minded. So his first answer was what he thought to be the textbook answer for a Christian/Catholic, and his second answer is his real answer, which is to justify himself but essentially evading the question with rap and quotes about the good things of laughter and love, so that the majority audience would not be smart enough to figure out his motive. He failed in Matthew 5:37, let your yes be yes, and no be no, anything beyond that is of evil.

So my reaction is not about how Colbert fail in bringing out the Gospel, or being a Christian witness, that's what the fundamentalists do, but that he failed in answering the question.

Now, let's look at Keller's case:

This is a skillful example of how to be a Christian in the public square. It is a form of witness that culture can handle. We should desire to have more Christians in these spaces and give them grace as they operate. Please do not make the error: if you cite person X at all you must answer for everything person X ever did or said. That is not fair. I am merely saying, this is a winsome way to answer this question that we should desire to emulate.

And here's his follow up to his commentators:

The recent post I made about Stephen Colbert's partial answer about his faith and the ensuing comments has shown me American Christians still have a long way to go on understanding Col 4:5-6, how to be "wise in the ways you act towards outsiders?" This is called contextualization. What is contextualization? It’s adapting your message to be understandable and compelling to particular hearers without compromising the truth in any way.Why contextualize? First, because everyone already does it. As soon as you choose a language to speak in, and vocabulary, and illustrations, and arguments, you are adapting to some human hearers more than others. If you don’t become conscious of how you are contextualizing—which is inevitable--you won’t contextualize well. Second, because Paul contextualizes in his speeches. Cf. how he presents to Bible believers in Acts 13, blue-collar pagans in Acts 14, educated pagans in Acts 17. Third, because the Biblical writers contextualized. See John’s use of Greek philosophy’s “Logos” in John 1; see the use of the Hittite suzerain treaty form in the book of Deuteronomy; see Paul’s contextualization of the gospel to Greek and Jewish cultural narratives in 1 Cor 1:22-24.Fourth, because Paul calls us to contextualization without compromise in 1 Cor 9:19-23. Fifth, because the incarnation itself was a kind of contextualizing so we could understand—the Word made flesh. Sixth, keep in mind you can’t and shouldn’t say everything every time when bearing a public witness to your faith. In Acts 17 Paul spoke of judgment but not of the cross or of how to get forgiveness. So it wasn’t a full gospel presentation. It was laying a foundation for talking to people later. Unless Christians are completely going to pull themselves out of the public square we will need to contextualize. Let's do so well.

Here's his reaction to comments.

My response to his first comment was, I just didn't know who he was referring to at first: Dua Lipa or Colbert? Sometimes as Christians, we can certainly do contextualization with questions, as Dua Lipa did. As for Colbert, other than saying that he's Christian, he evaded the question, if that's a winsome approach, then I can relate to some controversial interview Keller did in the past, starting with homosexual marriage, etc.

On Alex's case:

This is not surprising. Alex is usually caught in the confusion of fundamentalism and reformed. He was influenced more by the non-fundamentalists. But because he lacks nor cares for evangelical or person to person ministries where sacrifice is demanded, he could only cross that relationship line by extrapolation, and thus, using fundamentalist logic. By doing so, he had to constantly risk falsely accusing others of their comments. On Colbert's case, Alex differs from Keller slightly because of their ministries in life. Keller tries to encourage a way of evangelizing without scaring people off; Alex's is more about if there's a slightest right in certain things, JUSTIFY it with TNT! Both actually have problems, but I would say Keller's obviously on a better ground in this than Alex.

Penang Lor Mee Recipe

Penang Lor / Loh Mee Recipe (Braised Noodles)

Gravy
1.8 litre chicken stock
1 thumb size ginger
1 head garlic
1 star anise
2 tbsp brown sugar (adjust to taste)
1 tsp salt (adjust to taste)
1 tbsp 5 spice powder
1 tbsp sesame oil
2 tbsp light soy sauce
6 tbsp dark soy sauce
3 shake white pepper
6 tbsp corn flour mixed with water
2 eggs beaten

Ingredients
500g pork belly, lean meat
2 hard-boiled eggs
6 shiitake mushroom
1 fish cake
10 fish ball
200g yellow noodles
200g vermicelli
100g bean sprouts

Condiments
200g Chili boh sauté with 3tbsp oil
1 head garlic mixed 3tbsp white vinegar, 2 tsp sugar

Coriander, chopped

Moved from MetroPCS (Metro by T-Mobile) to T-Mobile

A couple of weeks ago, we finally did it. Couldn't stand the poor signal with Metro after they made the alleged upgrade in my area, and I lost signal all the time for more than two weeks. Their tech support was no help. I even wasted time and money ordering extra Metro sim card just to test it.

With T-Mobile Magenta Max $140/month (highest cost plan) we get buy two lines and get 1 free line, plus free Netflix Standard subscription (2 screens, HD quality), a $15/month value. Totaling around $170 including my discounted Samsung Galaxy S21 Ultra 126GB phone upgrade from S8 plus trade in. I also get 2 free Samsung Galaxy A32 5G phones. All of them are not unlocked, so have to wait for the 2 year contract to end. And they had to charge tax on all of them at full retail price.

Now this 5G phone definitely is much better. Faster, better signal, though South Amboy has always seen less coverage than other places. Hopefully this will improve in the future with the value of this city apparently going up.

Other cool perks with Magenta Max is free international calling and data as well as in flight free calling, etc.

Bye bye Metro, it's been a long time, since 2017 if not earlier, but you've forced my hand, the $110/month deal doesn't work for us anymore.

Station Bay

So I got a chance (by appointment) to visit the finally ready South Amboy Station Bay Apartment complex, after seeing it started construction by the train station a couple of years ago or so. I have video and documents collected in my drive.

It's more luxurious than I thought. Rent only. Ranges from $1.9k to $3k, from Studio 500 sqft to 2 bedrooms 2 baths 1.5k sqft. It basically has everything, shared gym, pool, theater, etc. Although it's not going to have a direct view at the ocean as another complex by another company will obstruct the view between this one and the beach. It's just very convenient for train as well as the allegedly coming ferry port.

Hopefully this only means good for our neighborhood, i.e. higher land value. I forgot to ask about the security of the property, as one would just want to walk in or around just for fun from time to time.

Car Tire Punctured much lately

I believe it's at least the third time in this past year, yesterday (Thursday) when Nadia said the tire got punctured again, this time, on the new back tire, driver's side. I last parked the car in the free parking lot of the train station, close to the Station Bay construction, which is a suspect. The one before this was the back tire on the passenger's side, and we drove it flat for so long that it exploded during examination (pumping) by Costco service guy, a good excuse for him to work overtime just to give us a new tire, gave him like $20 as a tip.

After complaining on South Amboy Facebook, someone advised that not keeping the tires well pumped is also prone to nail punctures.

Spaghetti Done Right

Quick and easy, using the Anova's posted recipe by Emily Farris. I came across this one when trying to use the Anova cooking device gifted by Tracy.

This is so far the quickest way to whoop up a very tasty spaghetti meal.

Here's a copy of it:

Ingredients for 6

  • 1 1/2 pounds jumbo shrimp (16-20 per pound), peeled and deveined
  • 4 tablespoons unsalted butter, diced
  • Kosher salt and freshly ground black pepper
  • 1 pound dried spaghetti
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons minced chives

Directions

  •  Step 1 Set the Anova Sous Vide Precision Cooker to 135°F (57.2°C). I later just skipped this step, not using the Anova cooker, and use regular cooking instead in a pot.
  • Step 2 Combine the shrimp and butter in a large zipper lock or vacuum seal bag. Seal the bag using the water immersion technique or a vacuum sealer on the dry setting. Place the bag in the water bath and set the timer for 30 minutes.

Finishing Steps

  • Step 0 When the timer goes off, remove the bag from the water bath and set aside.
  • Step 1 Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about for 10 minutes. Reserve about 1/2 cup pasta cooking water and drain spaghetti. Return spaghetti to the pot.
  • Step 2 Add the lemon juice, lemon zest, red pepper flakes, shrimp and butter from the bag, and pasta cooking liquid. Set pot over medium heat and cook, stirring constantly, until sauce thickens.
  • Step 3 Remove from the heat and stir in the chives. Season to taste with salt and pepper and serve.

Thoughts

Cleaning up my desk, came across a small poster about Delaware Water Gap hiking. We did Mt. Minsi last year, it's on Pennsylvania side. Mt. Tammany, the opposite mount across the Delaware River, is on NJ side and probably twice as hard/long as Minsi, from what I heard.

Every now and then we'll get this card in the mail addressed to "Resident", by Lupus foundation (888-445-8787). They provide free donation pick-up for clothing, shoes and household items at the indicated date on the card. But probably can arrange for any day by calling them. Well, it's free donation pick up, good enough.

For some reason we receive periodic medical journals called "Hackensack Meridian Health" addressed to "Our Friends at..." I guess I'll start reading it to learn something. So in this Winter 2022 edition, I read their innovation article on treating heart disease. Heart disease is caused by clogged arteries with fatty plaque and calcium deposit in the artery wall over time. Two types of conventional treatments are: Angioplasty (using balloon), Atherectomy (scraping the artery wall). The new innovation: Intravascular Lithotripsy (IVL) uses sonic pressure waves to break up the calcium, then using Angioplasty to push away the fatty plague now that there's no calcium blocking it. It's amazing how catheter can be inserted into the heart artery through patient's arm or leg. Finally a stent (metal tubing) is inserted in place of the catheter, to keep the vessel open. I'll keep this magazine as there's more to read in another time. In addition to the HMH journal, I also receive Robert Wood Johnson University Hospital journals, addressed to "Current Resident".

Optimum Online really tries to get our business, now offering 300 Mbps internet for $29.99. 1-866-213-2820, and even offering a $200 visa prepaid card. This is like the 5th time I received such offer already. When they had only 200 Mbps with the same price, I was already considering and tried to bargain for 300 Mbps, because our Verizon is now $39.99 for 300 Mbps since last year (was only 100/100 = 100 Mbps with the same price before that). But at the time Optimum wasn't willing to match Verizon's offer plus they have more negative reviews than Verizon, so I wasn't going to pay attention to it, even when they sent out an old guy salesman to do their bidding at our door last year. However, I'll keep an eye out on this, in case Verizon starts ripping us out. It was a bargaining game between Verizon & Optimum back when we were in Brooklyn and they were really flexible in customizing the pricing with us to compete for our business, but not so much so when we moved to Jersey.
