So the paragraph symbol thing is controlled in Fonts. You can turn it off in the ribbon menu like in Windows Outlook but it keeps turning back on.
So go to Outlook Preferences > Fonts. And go into every Fonts option to turn off the "HIDDEN" effect.
As for the signatures, in Outlook Preferences, there is a Signatures option.
Hopefully these settings stay for a while, who knows, nowadays these developers love to change layouts constantly, as if they need to prove they are evolving or something.
