Possible Recipe for Penang Hokkien Har Mee

大马美食~like 一 like~ **槟城《福建虾面》** 材料 :(4人份) 黄面1斤,豆芽50g,蕹菜100g,鲜虾12只,鱼饼1条,水煮蛋4粒 汤料:大蒜1头,小红葱10粒,辣椒干6条,香茅3条, 马来盏碎1茶匙,虾头虾壳~600g,鱼露、盐、糖和味精适量。 做法 : 1、小红葱和大蒜剥皮,辣椒干冼净一起捣烂,香茅拍烂。 2、油烧开后,转中小火把葱泥、蒜泥、辣椒干和香茅炒香至软身。 3、加入马来盏碎炒香后,放入虾头虾壳炒至出虾油。 4、注入2公升清水煮沸后,把鲜虾和鱼饼烫熟备用。 5、把汤头熬2小时后,过滤出汤头中的什物。 6、另外烧开一锅水,将黄面、豆芽、通心菜烫熟和平均分配四碗里。 7、配上煮熟的虾、鱼饼和蛋将煮好的汤头倒入碗内,配上虾酱油即可 【虾酱油的做法】 材料:虾米2汤匙,蒜头6瓣,小红葱5粒,湿辣椒3汤匙,马来盏碎1小茶匙,白糖少许 做法:虾米冼净泡软切碎,蒜头、小红葱剥皮捣烂。热锅下油小火炒软蒜头、小红葱,加入虾米碎和马来盏慢慢炒香后,加入湿辣椒炒至出辣椒油,再调入适量白糖即可。
