French Onion Soup

French Onion Soup may look sophisticated. But by heating Swiss cheese on top of soup in oven, all mystery's solved. Thanks to Kathy Maister, whose recipe is as follow:

French onion soup

serves 4

  • 1 and 1/2 pounds of onions - thinly sliced
  • 3 tablespoons of unsalted butters
  • 3 tablespoons of olive oils
  • 1/2 teaspoon of sugar
  • 6 cups of beef stocks (or vegetable stock)
  • 4 tablespoons of brandys
  • 1/2 teaspoon of dijon mustard
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 French bread
  • 12 slices of Swiss cheeses

In a Dutch oven heat butter with oil and sugar until the butter and sugar have melted.

Add the onions and cook over moderately low heat for 15-20 minutes, stirring to brown them evenly.

When onions have turned soft and golden brown, gradually stir in beef stock.

Bring to a boil; lower heat and simmer gently, covered, for 1 hour.

Toast rounds of French bread.

When soup is cooked, stir in the brandy and the Dijon mustard, and taste for seasoning, adding salt or freshly ground black pepper if necessary.

Place ovenproof soup bowls or crocks on a baking sheet with sides.

Ladle the hot soup into the bowls and top each serving with 1-2 slices of toasted French bread (or croutons).

Lay 1-3 thin slices of Swiss cheese on top of the bread.

Under broiler, melt cheese until golden brown and bubbly.

Serve immediately.

How churches today grow, East and West

The East focuses on friendship (not fellowship); The West prizes knowledge (not wisdom).

As a result, the East always have gatherings and great meals; while the West always love to write books.

If this means that the East seeks after emotional satisfaction and the West seeks after rational enrichment, then, there is no difference to the past saying: For the Jews require a sign, and the Greeks seek after wisdom.

Sign and wisdom of this sort, has nothing to do with God. It is not necessary to add God into the equation. So they would believe.

If this is done in the guise of "fellowship of the saints" or "the fear of the Lord", it is done to trap the saints. Hence, it is crucial to discern the difference, so that the culprits are unmasked by true love for our Lord, and not by self-satisfaction.

Friendship

There are two kinds of friendship:

1. One makes friends based on how one is being treated, in spite of how they treat others.

2. One makes friends based on how they treat others, in spite of how one is being treated oneself.

It can be argued for option 1., that many do make friends based on how those treat others. However, for many, the reason for this is only a measure to determine how they would be subsequently treated themselves.

Consequently, for option 2., the second clause is needed. So that how one is being treated, does not become the measure of friendship.

習慣一:彈琴前做些手指拉伸的動作。
動作以手指韌帶的拉伸為主,不要太用力。目的類似於跑步、游泳前的準備運動,能使你更快地進入彈琴狀態。冬天的話可以先抱會兒熱水袋暖暖手。

習慣二:堅持每天彈一段哈農。
只要你開始彈哈農了,就堅持每天彈一段。 這樣,即使每天沒太多時間碰琴,也能使你的水平不至於退得太厲害。 對初學者來說,每天彈哈農更能保持穩定的進步。

習慣三:由慢至快。
慢練的好處實在太多,我就不說了。 總之,慢練就是王道。
習慣四:第一遍彈就重視譜子上的每一個符號。
許多人第一遍彈都會忽略譜上的表情記號,然後在彈熟後改,其實在第一遍彈時就注意表情符號更能加深對曲子的理解。
習慣五:彈琴時備一支鉛筆。
很多時候譜子上並沒有詳細的指法、強弱指示,這時候,就需要用筆來把我們自己認為合適的指法、強弱等記號標上去。 記住要用鉛筆,不然寫錯很難改哦!

習慣六:沒彈熟一首曲子前少聽錄音。
錄音只不過是一個參考,沒彈熟就听錄音往往會導致我們去模仿錄音,從而盲目追求速度,並失去自己對曲子的理解。

習慣七:學會分段練習,單獨揪錯。
不要每次都從頭彈到底,第一遍彈一首曲子是先把它分段,熟悉一段以後再練下一段。 一旦發現哪裡有錯誤,要單獨把錯誤的地方挑出來改正。 分段練習也更有利於曲子的整體把握。
習慣八:盡量保持良好的手型。
不論彈什麼曲子,不論用什麼速度彈,盡量保持良好的手型。 也許有人會說:速度上去了,手型就沒法保證了。 其實不然,能在高速彈奏中保持良好的手型也是檢驗基本功是否紮實的標準之一。PS:在你沒有達到大師級水平前,不要問為什麼錄像裡鋼琴家的手型、觸鍵並不 符合要求。

習慣九:彈與自己水平相近的曲子。
很多人喜歡彈超出自己水平很多的曲子,這樣做其實是有害而無益的。 曲子超出自己水平很多,你就很難保證自己技術處理上的準確性,甚至會有大量的錯音。 而且以後即使有水平彈奏這曲子了,也很難改回來。

習慣十:學會背譜。
很多好老師都會要求學生有目的的背譜。 這並不僅僅是在鍛煉你背譜的能力,而是要你有更多的保留曲目。 這樣既能提升對曲子的理解,也可以偶爾在人前“秀”一下。

習慣十一:明確每天練琴的目標,不要同時練很多曲子。
和學習工作一樣,練琴也需要有目標。 比如確定今天要練熟曲子的某一段,或者要把某首曲子背出來等等。 不要盲目地同時練很多曲子,囫圇吞棗式的練習會使你感到進展緩慢。 相比之下集中突擊一到兩首曲子效果會好很多。

習慣十二:嚴謹至上,切忌得過且過。
彈琴不嚴謹可以說是業餘彈琴者的通病。 彈琴過程中難免會有各種各樣的難點,這時千萬不能有得過且過的心理,每啃下來一個難點,水平就上個台階。

習慣十三:經常使用節拍器。
雖然曲子的節奏是活的,但在曲子的框架沒成型之前,多用節拍器。 節拍器控制節奏只是它最基本的功能。 在彈奏練習曲時,可以靠節拍器實現逐漸提速。

習慣十四:經常返工以前彈過的曲子。
所謂“溫顧而知新”,已經彈過的曲子並不代表已經真正掌握它。 許多樂曲理解、技術處理上的要點第一次彈完曲子時並不一定會理解,都需要在水平更進一步後,靠返工來鞏固、認識。

習慣十五:避免超負荷的練習。
今天就看到一個“彈琴彈到手疼”的帖子,或許是練習方法上的問題,但超符合練習也會導致手疼。 雖然苦練、多練的確有利於技術的進步,不過也要有個度,彈的過多也會傷手,反而不利於進步。

習慣十六:堅持唱譜。
在初級階段,唱譜能加快識譜速度,提高視奏能力。 其實,在拿到新譜子時,唱一遍旋律,便可以對曲子有個大致印象,即使練熟了,堅持唱譜也能使演奏者對樂曲的旋律、情感方面的理解帶來幫助。

習慣十七:學會保護雙手。
很多男同胞都喜歡打籃球、攀岩等等戶外體育運動,其實這是很容易傷到手的。 輕則韌帶拉傷,重則骨折,這對我們彈琴者來說是致命傷。許多女孩子都喜歡留長指甲,這也是彈琴的大忌。

最後總結一些關鍵字做為中心:嚴謹、紮實、堅持、合理、適度、動腦。

Waitress fired for posting customer's childish tip

Childish, because it was from a supposedly "pastor". Janet Mefferd called her "pastrix" in a scoffing tone, since Mefferd is likely of the Southern Baptist.

"I give God 10%, why do you get 18%". Perhaps the pastor was drunk? Otherwise, I can easily take her on:

Because God thinks you are too cheap!

Why do you only give God 10%?

Why do you bother giving God 10%?

You give God 10%, why do you keep 90%?

As for the Applebee's president, Mr. Archer, interesting excuse he brought. Was it the customer's privacy being violated or company's policy? It would be immoral to just blame it on the policy. As for privacy, I supposed disdain could be done as long as it is kept private? I cannot imagine what domestic problem Mr. Archer would have at home.

I neither support nor oppose the waitress' action. Because there are other response could be done to that customer.

Christianity Today has an article in response. Fairly well written. After reading the comments, I believe a cross culture examination should have been included in the article.

Shortcut Evangelism

Today, the gospel is about finding all the good-doers/lovers, and proving to them that there's someone better than them. The success of this gospel depends on how convincing this "Jesus" is better than them and if they would like to join this "Jesus" club, after being convinced.

There's no conviction of sin, though maybe an acknowledgement of it; There's no calling for repentance, though maybe the promotion of humility.

Keeping the Hebrew Language Alive

I did not know that Hebrew was only used for Holy Text until late 19th century.

"Eliezer Ben Yehuda is said to be the father of modern Hebrew. Born in Lithuania in 1858, he immigrated to Israel in 1881 and dedicated himself to the revival of the Hebrew language, which at the time was used only to read Holy texts and not spoken in everyday life. Ben Yehuda invented words in Hebrew for doll, bicycle, towel, and other modern items. Linguists continue to research the roots of the Hebrew language to coin words for terms like SMS and blog.
